Ingredients
Coconut pulp - 1 cup
Coconut milk - 1 cup
Honey or date paste - 2-3 tablespoons
Cashews or almonds - 10-12 (soaked and ground, for creamy texture)
Vanilla extract - 1/2 teaspoon
A pinch of salt
Method
First of all, put coconut pulp, coconut milk, honey (or date paste), soaked cashews, vanilla and a pinch of salt in a mixer or blender.
Blend everything thoroughly until you get a smooth and creamy texture. If needed, you can add some more coconut milk.
Put the mixture in an airtight container and keep it in the freezer for 5-6 hours. Stir once every 1-2 hours so that ice crystals do not form.
After the ice cream is set, scoop it and serve it by grating dry fruits or some dark chocolate on top. If you want, you can also give it a chocolatey twist by adding some cocoa powder to it.
