Ingredients
Eggplant - 1 large
Gram flour - 1/2 cup
Rice flour - 2 tbsp
Turmeric powder - 1/2 tsp
Red chili powder - 1/2 tsp
Celery - 1/2 tsp
Salt - according to taste
Water - as required
Oil (for frying)
Method
First cut into thin round slices and soak in salt water for a while so that the bitterness goes away.
Mix gram flour, rice flour, turmeric, chili powder, celery and salt in a bowl. Make a thick batter (like pakodas) by adding water little by little.
Now dip the brinjal pieces in this batter and fry them in hot oil until they become golden and crispy. Drain them on tissue paper so that the excess oil drains out.
